It’s always good to have the ingredients to make something on the spur of the moment. You never know when company might drop by, and everybody loves nachos, especially when they have delicious chicken and peppers under the cheese. Nachos make a fun weeknight dinner; kids love to eat with their hands (although these may need a fork). If you happen to have small oven-safe plates, you can divide up the ingredients and make individual servings rather than a giant platter. These nachos can also be served while watching the big game or for a fun snack.
