Claudia Curici, developer of the popular web site, Creative in my Kitchen is a pioneer in the low-lectin trend, and her web site not only emphasizes low-lectin foods, but also gluten-free, sugar-free, and anti-inflammatory recipes and information. She has put dozens of her mouthwatering recipes and photographs in her cookbook, Everyday Low-Lectin Cookbook: More than 100 Recipes for Fast and Easy Comfort Food for Weight Loss and Peak Gut Health . Low-Lectin is a new trend that is slowly taking off; it promises weight loss and less gut pain, which is a problem for many.

The recipes are written in an organized manner, so they are easy to follow and can be followed by anyone, whether a seasoned or beginning cook. Most of the recipes have beautiful photographs, so cooks can see what the finished product looks like; that is very helpful.

There are dozens of recipes that will appeal to almost everyone, and most aren’t particularly difficult to make. However the list of ingredients in many of the recipes is very long, so plan on taking a bit longer in the kitchen than when making ordinary and dishes that are quick and easy from the tried-and-true repertoire that most cooks go to.

One small negative to this cookbook is that it calls for ingredients that aren’t found in mainstream grocery stores and most will find it necessary to visit a health food or specialty grocery to find things such as tiger nut flour, yacon syrup, licorice powder, sorghum flour and goat, sheep, or buffalo yogurt. With those ingredients, one must be determined and dedicated to go with this type of diet.

All told, this isn’t a cookbook for everyone, but the dishes are appealing, and anyone who needs this type of diet will definitely want to purchase it.
